Egyptian Roast Tomato Soup

I’ve been making this soup obsessively every Summer, when tomatoes are peaking, for YEARS. It’s my kids absolute favourite and actually mine (Mandy) as well!

This tomato soup is a little different in that it’s roasted in loads of beautiful aromatic spices, with its skin on for maximum flavour. Then we strain off all of the skins and seeds and gently cook it with our housemate veggie stock.

It’s a light and silky soup that’s perfect as an afternoon pick me up in your favourite mug, or served as a main with some rather cheesy sourdough (or Golden Days Focaccia?)

Either way, get a good dose of antioxidants and Vitamin C, K and B from this delicious soup. Each 1 litre jar has over 1 kilo of tomatoes inside.

Ingredients:

Tomato, water, coriander, garlic, onion, cumin, extra virgin olive oil, salt, black pepper.
