Now that it’s Winter, it has to be Cauliflower…Sri Lankan inspired!
This soup is a really nourishing, creamy bowl of warmth. This soup is loaded with my favourite tempered spices and loads of curry leaves. The cauliflower is roasted to bring out some nice caramelisation and then slowly and gently simmered until soft. A touch of coconut cream (because silkiness!) blended up, and then finished off with a stir through of delicious Nigella seeds. It’s also got a tonne of fresh garlic and onion to help activate your immune system!
Serving suggestions:
Top with roasted garlic zucchini
Swirl through some turmeric oil
Dunk your favourite buckwheat bread
Ingredients:
Cauliflower, filtered water, coconut oil, coconut cream, onion, garlic, curry leaves, cumin, garam masala, san elk vegetable stock (no nasties!), apple cider vinegar, Celtic sea salt, black pepper, extra virgin olive oil, nigella seeds.
