





Sweet Potato & Chickpea Curry

Serves 2-4
Vegan
Nourishing sweet potato and chickpea curry, topped with seasonal greens. Flavoured with lots of grounding spices, tomatoes and coconut cream. Gentle on tummies, we’ve made this with 12 hour pre soaked chickpeas and kept it mild so even the kids will love it (thoroughly tested!)
Serving suggestions:
Bulk it out further with some additional greens. Broccolini, zucchini, kale or extra chard would work well.
Serve with rice, naan and sour greek yoghurt
(A quick and easy flatbread recipe is equal parts greek yoghurt and self raising flour, combined together with a sprinkle of salt, fried over medium heat in a pan with generous amounts of butter and/or oil)Top with fresh coriander and finely diced cucumber
